Saint Lucia Hot Bakes

Ingredients


1 lbs All purpose flour

2 tablespoon Sugar

2 ½ Tablespoon baking powder

½ teaspoon Salt

1 tablespoon Butter

¼ cup milk

Oil for frying

Water


How to Make Hot Bakes

Pour flour into a large bowl add sugar, baking powder, butter and salt. Mix thoroughly and add milk and water.

Kneed dough until it becomes a soft and almost sticky to the touch.

If it becomes too sticky, add a little flour and knead the dough until you can touch it.
When you are done kneading the dough, cover it and allow it to rise for at least half an hour.

Get a frying pan, allow it to get hot and then pour oil into it. Cut up dough into small balls and make flat about ½ inches thick.
Place it in your frying pan of hot oil on a medium heat until it has turned golden brown and turn over to the other side for same results.

Green Figs and Salt Fish Pie

National Dish
The national dish of St. Lucia is Saltfish and Green Fig Pie. Early slaves discovered that saltfish was a good source of protein. As you must know Green figs are bananas.
This great tasting dish is made with Green Figs, which are (bananas), salted codfish, seasonings and cheese are the pie’s filling.

Recipe

Ingredients

2 sweet peppers2 tomatoes, thinly sliced
1 onion sliced
1/2 tsp. black pepper
1 tsp. bread crumbs
2 lbs. green figs
1 lb. saltfish1
1/2 lb cheese
1/2 cup milk
1 tbsp. lime juice

Instructions

Boil the green figs until tender. Peel and crush with fork while still hot and sprinkle with lime juice to prevent darkening. Soak the fish in boiling water to remove most of the salt. Remove the skin and bones; shred fish.
Press half of the crushed fig in a greased baking pie dish. Sprinkle 1/2 of shredded fish on fig. Spread half of sweet peppers (cut into thin strips) onion, tomatoes, cheese and black pepper.
Repeat layer - beginning with green fig and ending with grated cheese and black pepper. Top with milk and sprinkle with breadcrumbs. Bake in an oven at 180 degrees C, for 30-40 minutes or until the cheese has melted and is golden brown.

Plantains

INGREDIENTS:

2 large green plantains
1/2 cup breadcrumbs
1 egg
salt
2 tablespoons peanut butter
1 onion and stick of celery (minced)
1/2 cup milk

METHOD / DIRECTIONS:

Cook plantains and crush whilst hot. Add other ingredients and blend well. Place in dish and bake in moderate oven for 25 minutes.

Petit Piton

INGREDIENTS:

1/4 lb. minced meat
1/4 lb. chopped mixed garlic and onions
1/2 cup mixed vegetables
1/2 cup mixed parsley and celery
1 cup cooked diced Irish potatoes
2 tablespoons celery salt and marjoram

METHOD / DIRECTIONS:

Place all contents together in a saucepan and simmer until cooked. Add a little lime juice. Serve with a little cooked rice or with toasted bread.

Baked Stuffed Breadfruit

INGREDIENTS:
1 whole breadfruit
salt and pepper
1/2 lb. minced meat
1/4 lb. minced ham
1 onion chopped
1 tomato chopped
1 oz butter
1 clove garlic
chives

METHOD / DIRECTIONS:
Parboil breadfruit in salted water. Sauté onion, garlic and chives in oil, add meats and lightly fry, add tomato, salt and pepper. Peel and core the breadfruit, fill with mixture, brush with butter and bake in greased dish in moderate oven for about 30 minutes, basting from time to time. Serve hot
