1 cup of tapioca flour
1 small onion
1 tbs of butter
1 tbs salt
1 tbs salt
1 egg
½ tbs of chopped parsley
4 hardboiled eggs cut into quarters
1 pinch of sugar
1 pinch of sugar
Olives (optional)
Sauté the onion in the butter with a pinch of sugar (approx. 5 mins).
Reduce the heat and add the slightly beaten egg. Once the egg is cooked, add
the tapioca flour and mix well. Once it has taken a golden color (about 7-10
minutes), add the parsley. Add salt and serve hot with the quartered eggs and a
few olives if desired.
