Gari aux crevettes (Shrimps with tapioca)

Serves 4

1 cup of tapioca flour
1 ½ cup of shrimp
500g fresh tomatoes chopped
2 onions
4 tbs oil
Salt & pepper 

Mix the tapioca with cold water for a few minutes.  In a skillet, sauté the onions, the tomatoes in the oil. Add salt and pepper. 
Wash the shrimp.  Add to the skillet with the tapioca.  Add some hot water and mix well.  Once the tapioca is soft and compact, remove the skillet from the heat. Serve with a garnishment of fried onions.
