Equatorial Guinea Avocado Sauce


Ingredients
1/2 cup beef stock
1/2 cup water
½ chili pounded to a paste
½ tomato chopped
1 Tablespoon lemon juice
1 large avocado thinly sliced
2 Tablespoons peanut butter

Instructions
Bring the stock to a boil and add all the ingredients except the peanut butter. Reduce to a simmer and cook for 20 mins. Extract a few tablespoons of the broth, mix with the peanut butter and return to the pot. Cook for a further 10 mins, and serve warm
