Chicken Liver with Tomatoes

1 packet chicken liver
2 tbsp oil
2 onions, finely chopped
4 large ripe tomatoes, chopped
salt and pepper to taste

Wash and dry liver. Chop into small pieces. Saute onion in hot oil until transparent. Fry liver until sides are all sealed. Add tomatoes, salt and pepper. Simmer for about 15 minutes until sauce is thick and liver is cooked. Serve on hot, buttered toast, with roti or sandwiches.
