Ingredients
½ cup cracked wheat (bulghar)or couscous
salt + pepper
3 tomatoes
4 stalks scallions
2 tablespoons mint
Juice of 1 lemon
2-3 bunches parsley
¼ cup olive oil
2 cucumbers
Preparation
Pout hot water onto bulghar wheat or couscous. Soak for 15 minutes. Drain excess water.
Dice cucumbers, tomatoes, parsely, mint and scallions finely. Add olive oil, salt and pepper to taste. Cover and let sit in the refrigerator for at least 1 hour.
